Matcha is green tea or more specifically, a powdered green tea, more concentrated than the tea leaf version. For the last few weeks of the growing cycle, the tea is grown without direct sunlight. This causes a tremendous increase in chlorophyll production, a great detoxifier (heavy metals, chemical toxins). It is harvested & steamed quickly to prevent oxidation (retain color, prevent loss of antioxidants). The leaves are dried & made into a powder. At the Northgate Juice Joint we use organic produce for everything listed on the Environmental Working Group’s (EWG) dirty dozen (most pesticide/herbicide residue) and we don’t use chemicals or artificial fillers to extend the shelf life of our products. For example, our cashew milk is made with organic cashews and filtered water only! Thus, we make everything to order and/or in small batches and we pay 3-4x more for organic produce and products.
The Environmental Working Group recently released their Dirty Dozen 2017 list…produce with the most pesticide residue or the most harmful. There are several changes: Spinach shot up to number 2, Pears moved and strawberries continue to be number one due to the sheer number of chemicals , the serious harm they can cause and the fact that we are eating significantly more strawberries thus increasing the harmful effects.
